In cases like this, I use control characters (usually ^A or ^G).
I try to put a comment line above -- so people will notice:

	# THE NEXT LINE USES CONTROL-A CHARACTERS AS THE sed SEPARATOR:
	sed "s^A${foo}^A${bar}^Ag"
