performance monitoring (sar, vmstat etc.)

I have been reading up on performance monitoring tools
such as sar and vmstat.  I am now turning to the net to get more 
information than I can find in my documentation.  Specifically,
can someone explain the sar and vmstat algorithms regarding
the size of interval?  What information is lost as the interval 
size increases?
